How to Make Galactic Ice Cream Sandwiches

These colorful, galactic ice cream sandwiches are perfect for outer space themed birthday parties or just because! The recipe is easy to make and is engaging for kids (and adults!). Let your kids' imagination run wild as they turn the ice cream different colors and blend them into a marble design. Younger kids will enjoy rolling the sprinkles and seeing how the balls expand into cookies in the oven. Best of all, no ice cream machine is needed for this recipe.

Galactic Ice Cream

  1. The ice cream takes 6-8 hours to freeze. It’s a good idea to make the ice cream the night before you plan to enjoy the ice cream sandwich cookies. Adults, please assist young bakers especially with electrical equipment and ovens!

    1.     Pour whipping cream into the bowl of a stand mixer with whisk or paddle attachment or a medium bowl that you’ll whip with an electric hand mixer. Whip the cream in a bowl until stiff peaks form. See Pro Tip images. It will take about 6-12 mins. Stay near your mixer as the whipping cream will turn to butter if it mixes for too long! 

    2.     With a rubber spatula or spoon, fold (which means gently stir) in sweetened condensed milk. Mix gently so the whipped cream stays nice and fluffy. Ensure it is fully mixed in.

    3.     Divide sweetened whipped cream into 3 small bowls. Pour 2 teaspoons vanilla and purple gel dye in the first bowl and fold with a silverware tablespoon until combined. Repeat with the next bowls, pouring 2 teaspoons vanilla and blue gel dye and 2 teaspoons vanilla and black gel dye into separate bowls of whipped cream and folding with new spoons until combined. Feel free to leave white or dark streaks if you like the way they look.

    4.     Drop silverware tablespoons full of colored whipped cream into a medium or large freezable container with a lid. Alternate colors for colorful swirls. Try to use the colors evenly so you don’t end up with a lot of one color on top. 

    5.     Once you have used all the whipped cream, use a butter knife to make swirls. Take the knife nearly to the bottom of the container and swirl across multiple colors until you have a pattern you like. Sometimes less is more! Extra swirling can mix the colors until they are all grey. Put the lid on your container and freeze 6-8 hours until stiff.

Outer Space Cookies

  1. 1.     Preheat your oven to 350°F and prepare your baking sheets by placing one sheet of parchment paper or a silicone mat on top of each or spraying lightly with cooking spray.

    2.     In a stand mixer with paddle attachment or a medium bowl and hand mixer, mix room temperature butter and ¾ cups granulated sugar
     on medium low until smooth and light in color, 3-5 minutes.

    3.     Beat in egg on medium until combined. 

    4.     Pour 1 cup all purpose flour, ⅓ cup cocoa powder, ½ tsp baking soda, and 1/16 tsp salt into a medium bowl. Whisk together.

    5.     Add the dry ingredients to the butter mixture on low until a dough starts to form. Scrape down the edges and mix on medium for about 30 seconds. 

    6.     Pour galactic sprinkles into a small bowl. Scoop a rounded silverware teaspoon of dough and roll it into a ball. If it’s too sticky, refrigerate dough for a few minutes. Roll the top half of  each dough ball in sprinkles. Place sprinkled dough balls 2+ inches apart on parchment paper. If balls roll, lightly press them.
