How to make Brigadeiros

  1. Add ½ can of sweetened condensed milk, cocoa powder, and salt to a medium non-stick saucepan or frying pan. Over medium heat, stir the ingredients together with a heat resistant spatula or spoon until combined. It is important to continuously stir the mixture while it is cooking. When finished, the mixture should be pulling away from the sides of the pan and the consistency should be like pulled taffy (about 10-15 minutes). 

    Remove from heat and stir in 1/2 ounce of room temperature unsalted butter (1 tablespoon) until combined. Scoop mixture into a small bowl and let cool for about 10 minutes.

    Pour sprinkles onto a medium plate. When the truffle mixture is cool, using a ½ tablespoon measuring spoon, scoop out a flat scoop of truffle mixture and roll into a smooth ball. Place the balls onto the plate with sprinkles.  When all of the truffle mixture has been rolled into balls, roll each one in the sprinkles, pressing them in slightly so they stick to each truffle. Place the brigadeiros on a plate and enjoy! Brigadeiros can be made a few days in advance of serving and kept at room temperature in an airtight container for up to 2 days.
